How long to see improvement?

DD has been dairy free for a little less than a year (she is 2 today!). While that did help resolve some of her issues, she still had several (usually 4-6) loose stools with undigested food in them, per day. She also would get frequent diaper rash (from all the pooping I'm sure!), and has pretty poor sleep, though better than it was before we eliminated dairy. Recently, she started having what seemed to be food reactions again, so DH and I decided to also eliminate corn and soy (the reactions seemed to coincide with corn/soy exposure). It's been about a week since we did that, and holy cow! She has been eating way more. Today was the first time that I can remember that her poop has been solid (though she has pooped 3 times already today). Her butt is clearing up, too. Her sleep doesn't seem to have improved, but I'm hoping that gets better, too. Is it too much to assume that the improved eating (which happened within a day or two) and the solid poop have to do with the elimination of corn/soy? With dairy it took a full month for all symptoms to resolve, and probably at least a week to see ANY improvement, so I'm hesitant to believe this is working (and that maybe she'll start sleeping more??? And be less fussy in the night???).

i would give it another couple of days, but i would also be checking everything put in front of her for hidden soy and corn... it bears repeating that most white vinegar is corn and much of the caramel coloring used in processed foods is corn as well.

Corn is everywhere so you do have to be careful with that one, as Jacqueline said. Some people react to foods longer than others. For my DS, it only takes him 4 days to clear dairy, while it takes soy 10 days to get out of his symptom. Every person is different. While you're taking foods out, I would keep a very detailed food diary (including all supplements and all symptoms, including sleep habits) and you may either find hidden ingredients of corn/soy or other food culprits.
