Potato Soup Recipes?

I'm looking for a good one.

Or even Potato Broccoli Soup. I'm out of leeks though and baby is sleeping, so can't run to the store.

For some reason, I'm craving this and want to make it for dinner tonight. Anyone?

I don't have an actual recipe, I just wing it.

Boil some potatoes (and whatever else sounds good). Make a white sauce of flour, butter and milk. Season that to taste, add your veggies and whatever else you want (I always use cheese and usually some ham or bacon).

Cube 6 potatoes into about 1/2" cubes
chop a large onion

Put into dutch oven (mine is cast iron) and barely cover with water. Bring to a boil and turn down to simmer. Simmer uncovered until the potatoes are fork tender and water has cooked down about 1/4.

Add 1 stick of butter, and salt and pepper to taste. Cover and turn off heat. When the butter has melted, stir and serve.

It's a great base for any winter soup or chowder. Add sausage, garlic, turnips, celery, carrots, greens, shallots, bok choy, etc.

oh, yum! I've never made a potato soup - but we usually have a ton of them.

I have a combo potato/broccoli/cheese soup that is delicious.

1 medium onion- chopped
6 medium potatoes- cubed
Enough broth to cover potatoes by about an inch to two inches (I used chicken broth. Vegetable will do fine)
2 bay leaves
2 to 3 cloves of garlic (optional)

Cook the potatoes and onions in broth until the potatoes are fork tender.

Then add:
12 oz of broccoli (or 1 large bunch - fresh or frozen is fine) I chop mine so it cooks quicker

Simmer until the broccoli is tender.

Now add:
1 can of evaporated milk.

Bring back to a simmer and slowly add in 4 cups of shredded cheddar cheese. Stir well so that the cheese melts evenly.

This is ready to eat now or if you like a smoother soup you can either give it a whiz through the blender in batches or use an immersion blender to blend it smooth.

I've also made this fairly low carb by substituting cauliflour instead of the potatoes and it is very tasty that way too.
