Kid Soup Recipes?? Need Some Help!

Need some recipes for soup that my toddler will eat. Anyone have any tried and true favorites?

My standby is coconut chicken soup. I do my own stock and then add a little diced carrot/taters/zucchini/onions/garlic/whatever I have on hand. And a can of coconut milk. Makes it really creamy. Sometimes I add thai curry and fish sauce too.

If you have an imersion blender you can make veggie soup without your kids even knowing there is veggies!

Do you blend the chicken as well?

I don't have the recipe on me, but I'm sure you could find one... but DD1 really likes Italian Wedding Soup. Mainly because it has meatballs in it. She'll eat the veggies with the meatballs usually.

I've also found that even when she balks at eating 'soup' she will eat the contents if I strain away the broth.

How young a toddler? My DD2 loved/loves mini meatballs in chicken broth.

She's 3.5 (about) and is really picky. Doesn't even like tomato sauce with noodles.

I made a curried butternut squash soup last night but, you could make it without the curry.

Just cut a squash in half, brush with oil and roast cut side down for about an hour at 350. I also cut an onion and coated it in oil and roasted it along with the squash. Once the squash is done, peel off the skin.

Heat some broth and then once the veggies are done, add them to the broth and puree.

Someone else mentioned that they cook a head of cauliflower in the broth while the squash is roasting and then they puree the whole thing together.

Also, I added some heavy cream but next time, I'm going to try coconut milk.

It's a touch on the sweet side and very hearty and delicious!

Ds is really picky with soup..he hates all his foods mixed but he will eat miso soup...gobbles it down, I think it's the salty flavour. We usually put tofu, seaweed, sesame seeds, corn and he will drink bowl after bowl.

My children love potato leek soup.

I have never tried using coconut milk in my soups thought thanks for the suggestion!

Root vegetable works for my 2

onion, carrot(lots), swede (not too much) and potatoes and a few herbs. I usually make it when we have had chicken and have some stock around and I'll throw in any extra chicken too.

I prefer it "chunky" so I take some vegetables and purée them and add it back to thicken the liquid. The kids prefer theirs puréed till smooth.

My son will eat minestrone soup with just about any vegetable or bean I have on hand, as long as it has alphabet pasta!

Mine love my basic soup recipe:

2 or 3 potatoes cubed
2 or 3 carrots diced
1/2 onion finely minced
1/2 stick butter

Add all ingredients to pan and cook on low heat for 15-20 until tender stirring frequently. Then add enough water to cover veggies add salt and pepper and any herbs you like ( we like thyme, rosemary and sage ) it is delicious and very easy!

You can also very the above recipe quite easily instead of carrots you can use sweet potatoes then add some cream corn and blend it a little or a lot . You can add beans etc.

Very easy and always tastes good!

I love this tread. It's exactly what I need it.
Thanks

All of the recipes here are great. I want to add that sometimes you get more "buy in" to eating the soup if your child has some help in preparing it-however that might be for your family. When my youngest was little he would refuse most veggies. One day we were at a farm program and the kids were making veggie soup (something we do all the time, and ds would never eat it). I was astounded to see him gobble the soup up-two bowls full! He felt proud of his work, I guess.

Mine like taco soup and chicken noodle soup.

For taco soup, it's just taco ingredients in soup (ground beef, onions, beans, tomatoes, with taco seasonings, and served with chips, cheese, and sour cream).

For chicken noodle , I make broth, then add chicken, diced celery, carrots, and egg noodles.

The first food my DS would eat, and still one of his favorites, is potato leek soup. I have an immersion blender so blending it is a cinch. I use this recipe for the ratio of water/stock, potatoes, and leeks:

I usually just season it with a little salt and pepper, maybe 1/2 a smashed garlic clove, or a little thyme. We all love it here!

I don't use curry in my squash soup, but I do use coconut milk. It makes it perfectly creamy.

And my kids all love chicken soup. Bone broth + diced chicken breast + frozen peas + thinly sliced carrots, and sometimes noodles.
