Need to do something with ground beef

I have about three pounds of ground beef I want to cook today. Ideally, some of it would be dinner tonight, and some would be frozen for a later meal. I already made meatloaf last week!

Any ideas??? I'm pregnant and NOTHING sounds good. . .but I've noticed I feel 100% better when I eat meat at least every other day.

You could make lasagna, one for tonight and then freeze one?
Hearty meatballs
Stuffed peppers
Meatloat
Sloppy Joes
Burgers
Hamburger Mac&Cheese

I would make a big batch of meatballs, use some tonight for beef stroganoff or spaghetti. Or how about shepherd's pie or some chili?

My favorite go-to for making and freezing...

1 lbs. ground beef
1 cup quinoa or rice cooked in chicken stock
lots of seasonal veggies, diced
1 small onion, diced
couple cloves of garlic

Sautee the onion, garlic, and beef together then remove. Saute the veggies. Put both together and add the cooked rice or quinoa. Add more stock if needed so it's not dry. Season with your favorite seasonings (I usually do Italian herb blend), salt, and pepper.

Good suggestions so far! A couple to add:

lazy/poor man's cabbage rolls (cabbage roll casserole).
tacos or taco salad
layered taco casserole (layer cooked taco meat, prepared mac n cheese, salsa and grated cheese - repeat, ending with grated cheese on top - serve with extra salsa and sour cream)
