Favorite fall & winter foods?

I could use some inspiration! What are you excited for?

I'll start with chili, roast chickens, and baked potatoes! I'm also going to try my hand at potato leek soup for the first time.

I would have to say squash, pumpkin, pumpkin pie, apples, roasts (beef and pork).

I'm vegan but here's mine

roasted potatoes
mashed potatoes
baked potatoes
Ok lets just say potatoes of ANY kind!!

soup(spicier the better)

*pears

*canned pumpkin or squash for easy soups or baked goods

*apples for baking with meat roasts

*breaking out the slow-cooker for meat or tempeh stews and chilis and beans

*baked potatoes piled high with steamed veggies and tempeh, and covered in tofu savory sauce * 1/2 lb firm tofu
* 3/4 cup vegetable stock or water
* 1/4 cup vegetable or almond oil
* 2 tablespoons tamari
* 2 tablespoons nutritional yeast flakes
* 2 tablespoons chopped fresh basil (1 tsp dried)
* 2 tablespoons lemon juice
* 1 teaspoon Dijon mustard
* 1 clove garlic (peeled)
Put into blender and warm.

* acorn squash stuffed with couscous, raisins, walnuts, maple syrup, and butter then roasted in the oven until tender

I love slow cooked roasts
Homemade breads warm with herb butter
Chili and cornbread!
Soups and more soups
Hearty Strews
Whole roasted chicken with apples
Stuffing!
Cranberries
Butternut squash

Tell me about the roasted chicken with apples! Do you roast the apples with the chicken? It sounds delicious.

Tas Kebap (a Turkish Beef stew)

I like soups and stews because I can actually cook them on top of my wood burning (not cooking) stove. I can let them sit on that all day long and they come out so tasty!

What I REALLY like in the fall is to cook outdoors over an open fire in my cast iron dutch oven. We have a small fire pit I can do this in, although it's not ideal. But then we always go camping for about a week in the fall and where we camp, I do almost all of the cooking over the open fire. So.much.fun!

The Gingered Sweet Potatoes with Rosemary is easy--not really a recipe, just an idea.
Wash and cut potato in thick wedges. Place on baking pan and toss to coat with olive oil. Peel and grate fresh ginger over the potatoes. Sprinkle with kosher salt, freshly ground pepper and fresh or dried rosemary. Roast in oven (around 400), turning a couple of times, until browned. Enjoy!
