VOTE for the best vegetarian cookbook

i am interested in everyone's opinion on the best vegetarian cookbook. please submit your favorite vegetarian cookbooks and we'll tally up the votes.

I'm not vegetarian but we prefer to eat little meat and my favorite, by far is Vegetarian Cooking for Everyone by Deborah Madison.
I also like her other books but VCFE is just a bible on what to do with every vegetable, every grain, every kind of bean, stirfries, curries, baking with seasonal fruit. It's really great.

"How to Cook Everything Vegetarian" by Mark Bittman

The Peaceful Palate by Jennifer Raymond.The recipes are simple, nutritious and economical. It's by far my most used cookbook. It's also my husband's favorite cookbook. (He is an omnivore.) He absolutely loves the recipes. Most of our favorite meals come from this book.

In terms of comprehensiveness and simplicity, I'd have to agree. I love that he gives up to 6-10 variations on a lot of the recipes.

I've always loved The Farm Cookbook. It's an old one, but I've always loved it. It was the only dedicated vegetarian book in my collection for a while. Of course back when I became a vegetarian, there weren't many veggie books out there.

I am getting really excited, now. DD has been super awesome about trying new things (as has my father!), so I am looking forward to the recipes!

My DH's uncle LOVES Shepherds Pie and we made the recipe in Veganomicon for a holiday meal and he wouldn't believe it was vegan. He took some home with him (and he lives in NYC - we were in MD)!!!

I have a couple of shepherd's pie recipes to try out, now.
Question- the Veganomican version... might one be able to make it with Guinness? Because my mother makes a lamb shepherd's pie with Guinness gravy, and I would love to have a vegan version...

I never thought about it. I just pulled out the book and I think you could probably substitute some or all of the vegetable broth with Guinness in the actual tempeh layer to get that thicker gravy.

I love Candle Cafe's cookbook. Everything is vegan and most of it is pretty simple.
