Thanksgiving Breakfast Pumpkin Bread Pudding

In honour of Canadian Thanksgiving!
I just kind of made this up last night and thought it was delish. Mind if I share?

Breakfast Pumpkin Bread Pudding
b/c this is for breakfast, it isn't super sweet.

Mix together in a baking pan/casserole dish:
1 15 oz can of pure pumpkin (not pumpkin pie filling)
2 eggs
1 cup milk
1/4 cup brown sugar

Add:
*2 or 2.5 cups of bread cubes
(bread should be quite stale or better yet, frozen)
*1/2 cup raisins
*1 tsp cinnamon
*1 tsp nutmeg

I starred these ingredients b/c I didn't measure them, that's what I'm guessing I put in. I don't think the amount matters all that much.

Put in the fridge to sit overnight.
In the morning, bake at 400 degrees for 30 to 40 minutes.

I did something similar this morning, but grain free!!!

I combined pureed pumpkin with heavy cream, spices and allowed to thicken a bit. Then I took it off the heat, added 8 egg yolks and a bit of maple syrup, and baked.

It was the yummiest custard!!! Topped it with left over unsweetened vanilla infused whipped cream!!!

Oh. My. Goodness!!! I wish you had kept that to yourself, because I think now I MUST try both of those recipes! They sound absolutely divine! Thanks for posting them so a pregnant mama has a reason to indulge, lol!

I got the idea from a recipe for plain custard! I looooove it both ways.

Gardenmommy - I'm eating it right now b/c I'm an overdue pregnant mama who needs a little lift in the morning (I also very much recommend it cold at 3:00AM when awake with the annoying pregnancy insomnia).

LOL!! I can totally see myself doing that, even though I am only 17 weeks. Ahhh, there has to be some reward for all the annoying little bits of pregnancy, right? I am going to try making that this weekend.

Ooh - I love fall foods (and the fall weather that's finally arrived here). Both recipes sound great! We're going to carve a pumpkin this weekend - I think I've found a way to use some of those "pumpkin guts"!

I have an awesome Pumpkin swirl cheesecake with gingersnap crust recipe....
