Canned salmon

What can I do with a can of pink salmon? I picked some up because it was on sale at my health food store. It sounded good at the time (pregnant brain, I suppose), but I really have no clue what to do with it. Thanks!

Make salmon burgers? Mix a couple cans of salmon, an egg, some chopped onions, dill, parsley, breadcrumbs, lemon juice, and salt, then fry.
I also find it good mixed up like tuna salad. Or just out of the can in a sandwich.

Mix it with some yogurt cheese/cream cheese, add a little garlic, onion & salt and you've got a great spread for bread, crackers or flat bread.

I find that with salmon cakes or salmon burgers, they don't stay together well, so they end up being fried fish bits on top of salad.

I grew up eating salmon patties - can of salmon, one medium potato mashed with butter, an onion, eggs, salt, pepper, enough bread crumbs (or whatever you are comfortable with) to make it stick. I fry these and they stay together no problem. I think the potato is key. Oh, and refrigerate the mix at least 30 mins before shaping into patties.

All of the suggestions above plus I love to use it in fried rice. I also like giving my salmon salad (made with mayo or yogurt, onion, celery etc.) an Indian flair with a dash of curry paste or powder. Yum! Canned salmon is one of my staple foods (trying to stay away from tuna) and I was so excited to find wild Alaskan canned salmon at Costco again the other day, after they'd not been carrying it for like a year!

I always just use egg for binder and then I bake them- they always stay together just fine that way. I just bake them because it is easier and quicker for me. I usually do a can- w/ about 2 eggs and some chopped veggies- precooked or not and then some seasonings.

We just used some last night - I made a roux with butter, added milk & thicken, then the salmon, season a bit if you like with some sea salt and whatever else you like. It's yummy over grain, soaked pasta, or just a slice of toast. When we have leftover grilled salmon I like to throw that in, too. Dh likes to have peas in it.

Oh my family loves fish cakes. I use tuna or salmon with mashed potatoes. Just add egg, quick oats, and seasonings. Yummo! I love salmon so I can eat it out of the can LOL

I made salmon patties last night. I mushed up the can of salmon (keeping all the good salmon oil and smushing up the tiny bones for the calcium in there) then added 4 eggs, about 1/2 cup of rice bran, garlic powder, onion powder, and dill. Then I fried them up in grapeseed oil. I served them with green beans, and I wanted to make quinoa on the side, but I didn't have any in the house, so I just ate those two dishes and I made mac n cheese (rice pasta) for the kids.

Drain, mix with 2 eggs and some bread crumbs.....form into patties and fry in butter

I make salmon chowder. Sauté an onion and celery in butter, add diced potato, the salmon liquid and enough water to cover, simmer until the potato is cooked then add milk, chopped dill and the flaked salmon and season with salt and pepper and heat through.
I take a salmon sandwich for lunch almost every day, too, because it's such an easy way to get more fish.
Canned salmon is great because, according to what I've read, you know it's always wild and not farmed.

Ok, I think I will have to buy more salmon to try all these ideas! Thank you SO much, because I truly am uninformed about how to use canned salmon. Or was, anyway. I feel much more enlightened!

wow...thanks mamas!! like OP, i'm off to costco to buy more canned salmon. (but not before i make that yummy chowder RIGHT NOW) grin.
