I'm craving protein in a big way! I'm not really a vegetarian, but we chose not to eat a lot of meat (especially prepared meats), so I don't have the typical lunch meat type items around my house. I need some ideas for quick and protein rich and whole-foods snack items I can make ahead and have on hand. I'm a super busy college professor and I also have a 3 year old to chase around. I'd prefer warm foods, since the weather has gotten quite cold (highs in the 40s F) and we keep our household heat set at 60 degrees F. Also, I no longer have a gallbladder, so I have to stay away from foods with excessive amounts fat (such as avocados
) otherwise I get terrible abdominal cramps.
A few things that come to mind:
-boiled eggs
-scrambled eggs with toast
-cheese/black bean quesadilla
-yogurt
I'm sure I'm missing some obvious foods...just can't think of them right now.

Funny you should mention that! I have the crockpot out and ready to make red-lentil soup for Wednesday. I LOOOOVE lentil soup
! But there really is a limit to how often you can eat it, yk. Maybe I'll make some split pea soup for lunch.
