a good crockpot recipe?

My cousin's "bridal luncheon" is coming up, and we're having a pot luck. I'd love to find a good crockpot recipe where I can throw the ingredients in the crockpot at night and then just grab the dish and head over to the party in the morning.. does anyone have any good recommendations for me?
