vegan cupcake recipes

i am having a first birthday for my little girl the first weekend of november
and some of our friends attending will be vegan so i would like to have a nice option for them so they are not excluded from the sugar high!

i have heard that you can supplement flax for egg in a recipe, but i have no idea how to do that. i do have ground flax on hand though.

any tips and recipes would be greatly appreciated!

There's a fabulous vegan cupcake cookbook out there - see if you can pick it up from your library. It's pretty fabulous.

To sub flaxseed for eggs - you want to use 1 tbsp of ground mixed with 1 tbsp water per egg (and preferably, do it in a small blender or food processor so it gets foamy).

Vegan Cupcakes Take Over The World. Seriously. Run out and buy this book. My friend's favorites (and they are omnis) are the red velvet cupcakes. You'll make many of these cupcakes over and over even if you aren't vegan b/c they are so good. And easy. No "substitutes" or expensive egg replacers, just normal baking ingredients.

I am not vegan but I use the take over the world book anytime I want cupcakes-or cake-

I do make lots of substitutions though because it uses a lot of canola oil and shortening which imo is not very healthy. I use coconut oil.

DS really likes looking at all the yummy pictures
