Vegetarian main dishes for Thanksgiving?

My SIL will be our guest for Thanksgiving, and she's vegetarian. Any brilliant suggestions for a main dish for her that might also work as a side dish for others, and won't require baking? I could go either way on it doubling as a side dish - I'm happy to make something just for her - as long as it's yummy.

I could grill, cook on the stovetop, or (if I had to) microwave. I was thinking something savory with portabella mushrooms, maybe?

Any ideas/recipes would be very welcome.

Edited to add: if she likes faux meat products, I HIGHLY recommend Field Roast Celebration Roast as the main course. It's delicious, made of whole food ingredients, etc. They come in 1 lb and 2 lb roasts. LOVE them!

We've often made squash or mushroom risottos.

A stuffed portabello mushroom cap would be tasty - some kind of rice/grain with veggies and topped with breadcrumb/cheese topping (you could cook most of it ahead of time/on the stove and just assemble and broil them briefly before eating - I know that'll use the oven, but for a lot less time than other dishes).

I usually do a stuffed acorn squash or something similar, I'll make a rice- or quinoa-based stuffing.

I just made a quinoa stuffed portabella. the mush was roasted in the oven already stuffed with quinoa, but could very easily be grilled. i topped it with cold roasted beets and tomato basil goat cheese. It was so yummy. The quinoa i just cooked on the stovetop with broth for flavor. we will def eat again, but it was very filling , pretty and good texture.

I do have a crockpot; I hadn't considered risotto, but what a good idea.
