Peeling Ginger root

Is there an easy way to do this? It's always such a struggle for me, and sometimes I end up knicking my fingers.

Just grab a spoon and scrape away. It comes off really easy too, no nicking or losing any precious root.

Yup, I use a spoon too (the end that you'd put in your mouth ). But I have to confess, if the ginger is going into a marinade I usually don't peel it. If I'm cooking with it I'll peel though.

Ooh, I'll have to try the spoon trick. I usually use a vegetable peeler and no knicked fingers here.

I saw Alton Brown do the spoon trick on his show and thought it was really strange. I always used a veggie peeler and it was fine... but I tried it, and the spoon is so much better!

I always use a paring knife with no problems.

I use a knife. I like to do a lot at one time, then freeze it and take out only what I need.
