Salmon Patties

1 15 ounce (something like that. It's the tall can) salmon
1 cup oatmeal
1 bunch green onions, sliced thin with some green tops (5-6 onions)
1 T lemon juice (I've left this out if I don't have a lemon)
1-2 eggs, depending on size

Mix everything up, including the liquid from the salmon can. Form into 6 patties. Fry in coconut oil until brown on both sides.

I made salmon patties based on SewChris' recipe and I used whatever oats we had (from HFS bulk bin). They were large pieces, so I processed them for about 30 seconds in our small hand-held Braun food processor first.

Yes, that's what I use. To be specific--Quaker's Old Fashioned Oatmeal.

When the Quaker Old Fashioned Oatmeal is out at the grocery store, I have bought the 1 minute oatmeal. Because it's ground fine to cook faster, it is hidden in the patties. But doesn't effect the taste, only the appearance.
