Apple Bran Muffins

I'm looking for a really great, tried and true, apple bran muffin recipe. Preferably, it would be soy free and use a higher fiber flour like whole wheat pastry flour. Thanks!

I made these and they would have came out PERFECT except the amount of baking soda is WAY WAY too much. I knew it was too much as I was making them, but I followed the recipe and all I could taste was b.soda...sad! I do plan on trying to make them again w way less baking soda.

I googled that one! Would you halve or quarter the baking soda?

I'm really not sure. the baking soda helps it rise(right?..lol) but it was SERIOUSLY way to strong! I'm thinking when I make them again it'll only be .5-1 tsp of soda...and I'm hoping ds will eat them he was so grossed out he may not...I also added chopped up sunflower seeds as well

Thanks! They do need to rise but not that much. I'd go for 1/2 tsp., I think.
