what to do with carrot pulp

so I am starting to make fresh carrot juice every morning. But I end up with some really nice pulp, it is still a little wet (one thing I hate about our juicer is that there is always some juice spit out with the pulp, what a waste). So we don't have our compost up and running yet and I would hate to throw it all away. What can I do with it?

Maybe save it for soup stock? I'd also just add it to sauces and such. Probably lots of good fibre and some nutrients left in it.

You could also strain it through cheese cloth to get more juice out of it.

i would make a nice, creamy, carrot and ginger soup

mmmmmmmm, carrot ginger soup sounds really yummy. I can freeze the pulp until I have enough for soup, right? do you have a favorite recipies?

I make muffins!!! Great source of fibre, and super yummy!

Add to meatloaf or meatballs

Mix with some fresh spinach and maybe goat cheese and stuff chicken breasts with it

Smoothies

Add to soups/stews (love the carrot/ginger soup idea!)

I like a lot of the previous suggestions.

we freeze our juice "waste" so that we don't have to think of something to do with it right away.

pasta sauce
"vegan" tuna salad (add veganaise, kelp powder, celery, salt & pepper a local veg resturant near us serves it like that)

Well, I would make carrot cake with cream cheese frosting, but that's probably because I'm craving the frosting right now.
