I'm roasting a chicken and a squash and making green beans on the side. Chicken is brining right now.

RE: kale....I like best either:
sauteed in butter or bacon fat or
tossed with olive oil and salt and baked until crispy (usually ~15 min at 350)

Last night's dinner turned out VERY YUMMY. Even the kids totally LOVED it, I used kidney beans though not lentils. I was very impressed though. So they ate kale, kidney beans, carrots and peas in that.

Tonight's dinner is Chinese--a bottled Szechwan spicy sauce on steak stir fry and sweet and sour chicken stir fry and storebought frozen eggrolls and wontons. Fairly easy other than all the chopping.

Veggies to be included--sugar snap pea pods, carrots, red and yellow bell pepper, broccoli, baby corn. Plus the egg rolls are veg--cabbage there I guess.

Baked chicken, steamed asparagus, and a salad (romaine, red onion, orange pepper, tomato, cucumber, carrot). It is very, very rare that I want a salad so I figured I should probably jump on it!

Tonight was roast tarragon chicken with an awesome sauce I make with cream, wine and tarragon, mashed potatoes and gravy and green beans.

Oooohh I cooked one of my favorite meals tonight! It was pasta with many peppers (red, yellow and Anaheim), onions and almonds. Add in parsley, oregano, garlic, chili flakes, cooking sherry and parmesan cheese.

Not so proud of myself tonight--grocery deli fried chicken, but I made the sides--garlic mashed potatoes, butternut squash and sweet potato crack (a recipe I got here, , it's supposed to be just sweet potato but I have a TON of squash around now!), and coleslaw. Which I read about 2 mins ago I could've added a bit of kale to and would've.
