I'itoi and green onions...HELP!

We recently joined our local CSA and already we have an item that I am at a loss what to do with...i'itoi onions.

I googled them and found out they are a local indigenous onion from the desert and found a couple of fancy recipes requiring many more wild and traditional foods which I wish I knew how to harvest and/or find in the stores but I don't!

So they claim to be similar to green onions but green onions aren't really in my cooking repetoire either...I'm not the most accomplished cook but have been trying to expand my skills with recipe books and online.

Any ideas? Direction? I don't want to waste them, I think its great that they are a local traditional food and want to use them well!

I've never used that type of onion, but I googled it and they look and sound delicious. Two things I do when I have lots of green onions--I make scallion pancakes and/or I just simply grill them by the bunch and serve them with grilled meats or fajitas. Or anything really. My DH's family loves onions of all sorts and will eat them like other people eat grilled asparagus.

If you're in the mood for some cream and bacon, this onion gratin is the best stuff to ever enter my mouth. It's soooo good, and it's perfect for those type onions.
