Chestnuts? And help me clean out my freezer...

So I've connected with several milk donors, and now I'm in the position of having to clean out the freezer FAST because I'll be getting gallons of BM in the next few weeks.

So whatever can I do with these things that put them into another form?... I can can (no pressure canner though), dehydrate or eat what I don't give away, but it has to come out of the freezer. Although if I can turn it into something else that takes up less room in the freezer that'd work too.

I have about 8 pounds of chestnuts (in the shell).
I have several pounds of cranberries.
A gallon of blackberries, and another of strawberries.
About 4 dozen duck leg/thigh quarters, and several whole ducks.
About a gallon of duck stock.
A gallon of asparagus, 2 gallons of green beans and a gallon of brussel sprouts.

My BFF will be coming down this week to take whatever she can use, and I have another friend here in town (maybe two) who will gladly take whatever I deem must go.

Have you considered buying a second freezer?

I think about it all the time, and I think a situation like this would push me to do it.

Honestly the quantities you are talking about are huge. Can you throw a huge party with your BFF; invite lots of friends and neighbors? no?? a few other ideas...

cranberry infused vodka, also blackberry. Makes a great present (housewarming, hostess gift, b-day etc)

strawberry ice cream, but then that has to go back to the freezer....

Have a chestnut roast with your BFF. Eat what you can, she takes some, you use the rest in salads, roasted with some of those brussel sprouts, etc.

Pickle the asparagus and the green beans. Put in nice jars, wrap with a ribbon and Christmas is done. neighbors, postal worker, teachers, family, friends

The duck legs would make great confit but 4 dozen legs is restaurant worthy.

Cranberries - I'd make a large batch of cranberry sauce or chutney and can it, then give most of it to friends and family between now and Thanksgiving. They can use it on the holiday or for leftovers.

Blackberries - I'd make a cobbler or apple blackberry pie and make jam to can with the rest. I'm envious - I made several different jams this year and this was our favorite - but we have the least of it!
