Good Deer Meat Recpies Please

I have never had deer meat, venison right? My BIL shot a deer and will be sharing the meat with the family, most of the family would rather have factory meat from cows, chicken, or pigs because of taste and that is what they are used to. However I would rather have wild deer or other game then anything from a factory. Anyway I bet we will be blessed with a lot of the meat because of this and I have no idea what it tastes like or how to cook it. So if you are willing please share tried and true venison recipies for a newbie to game.

Well I grew up eating deer and elk so they taste totally normal to me. But if you're used to factory meat, it will taste much different.

I use deer just like I would beef.

My son got two deer last season....it's wonderful to have all that delicious, healthy meat. The backstraps and roasts are my favorites. When you pan fry the steaks, they just make thier own delicious gravy right in the pan!

It helps most first-timers to soak the meats in milk overnight. It takes out some of the "gaminess" that some people complain about. I take a deer roast either marinated overnight in milk or beer....throw it in a crock-pot, add lots of onion, your fave seasonings, veggies, etc. Easy family pleaser here.
I think being creative with gravies and sauces are the key to most venison recipes. We also ate a LOT of deer brats and burgers. I boil the brats first. The burgers are delicious and much lower fat content than beef. They take a bit longer to cook on the grill, and I use a heavy onion, pepper, & garlic salt mix.

Just use it like you would beef, and make sure to trim off as much of the fat as possible (which is where much of the 'gaminess' comes from). I make venison fajitas, venison stir fries, venison burgers, venison spaghetti (either meat sauce or meat balls), venison tacos, etc.

Canned venison is AWESOME. I could eat it cold, right out of the jar. We will be canning most of the deer we get, the rest will be stew meat. I use just like I would for beef stew. The venison give it so much more flavor!

If you are just starting out to eating venison it would probably be worth having it somewhat processed at a meat locker and getting some ring bologna made- IMO it tastes less "game" and is a quick meal to have on hand and my daughter loves it.

You can also get it ground in 1lb packs and for recipes where you would use beef try 50/50 with ground beef and venison. This way its almost like a filler and stretches your beef a lot farther and eventually you can cut back on the beef til you get used to it.

try making jerky out if it, for starters--slice the meat thinly, marinate and use a smoker, dehydrator or dry in your oven. i love venison jerky.

crockpot bbq venison roast (let cook all day until tender and falling apart)

make meatballs, mixed with bulgur to stretch and serve in spaghetti or bbq sauce

My dh hunts and we eat venison almost exclusively. We use it as one would use beef.
We also process our own deer, taking care to remove all fat, sinew and silver skin possible. This is what adds a strong flavor to the meat. I have never soaked ours.
Canning is a great way to prepare the steaks/stew meat. It comes out very tender and best yet, makes cooking a breeze. I then heat the canned meat with veggies and barley for a filling soup, or stroganoff over noodles or mashed potatoes with gravy. I even make enchiladas and tacos with seasoning added. Rice, tomato sauce and veggies with beans are all good additions.
I also make big batches of spagheti sauce and chili (minus the beans) and can for quck meals like spaghetti, ravioli, lasagna, vegetable soup, zuchini casserole and shepherds pie.
Use your crockpot with potatoes and veggies for a stew (add brpwn gravy mix if desired). I cook steaks and roasts all day then shred and add BBQ sauce for yummy sandwiches. Make extra and freeze for fast heat and eat meals.

How do you can deer? And what do you use it for? Can you water bath it or do you have to use a pressure cooker?
