I have a Ford Edge, and I've been pottying my son in the back under the hatch. It was fine in good weather but not very private, though!
It's been cold lately, so I wanted to figure out how to potty inside the car with the doors closed. We have his car seat in the middle, so there's not much room. But then I remembered that the front passenger seat folds flat. So I folded it flat and put it all the way forward. I was able to lay him down there to undress him and there was plenty of room for him to sit on his potty at my feet. The other nice thing about this set up is that he can't see outside, so he's not too distracted to do his business. Tried it yesterday for the first time, and it was great. I was able to nurse him and then move right into undress, potty, redress mode. Here's a pic!

We use a Baby Bjorn little potty with a grocery bag/paper towel liner. I pull the grocery bag up a little in the front to make sure the pee stays inside. So far, no trouble at all!
