Cornbread stuffing?
Someone mentioned making croutons out of polenta. That might work.
Or if you have a good bread you like, can you make croutons with it (low temp oven, drizzle with olive oil and some spices and toast)? And then put some kind of broth in there with it? It's not something I'm even going to attempt this year.
