Avocado Ideas

So this pregnancy avocados have never tasted better. Other than topping mexican foods, guacamole, and avocado swiss sandwiches, what do you do with them? (I'm vegetarian...)

on black bean burgers, in black bean pasta salad, in a fake meat salad (think fake chicken salad), some people bake with them (I tried the avocado pudding, um, no go).

in salad, on crackers, or I just eat them with a spoon as is. Sometimes sprinkled with a bit of sea salt. MMmm, one of my favorite snacks.

I love to eat them as is with tamari (soy sauce) in the center, or lemon juice and salt...

Last pregnancy I loved Avocado salads with shimp and a sesame dressing...

I also love them sliced on top of a rye toast with a runny egg and a sharp cheese...

Make avocado sushi. When I was pregnant with my last DD, I wanted avocado sushi ALL the time. Not sure if it was the avocado I wanted or the seaweed!

Just cubed and tossed into any salad. Or mashed up with a little salt and scooped up with some crackers.

i dont really care for it, but my inlaws eat them chopped up with milk and sugar (in a bowl like cereal), for desert.

My DH's grandma makes this: Avacado Key Lime Pie

Found the recipe online.

Avacado Key Lime Pie
1 medium Hass avocado
1 can Eagle Brand sweetened condensed milk
3 1/2 oz. fresh squeezed lemon juice
graham cracker pie crust made with brown sugar (use recipe on box of graham crackers)
heavy (whipping) cream, whipped without sugar
______________________________

In blender, mix avocado and milk thoroughly then blend in lemon juice. Pour immediately into pie crust (it starts setting up fast). Top with unsweetened whipped cream (The pie is so sweet that the unsweetened cream is a nice balance) and refrigerate for a few hours.

It does include sweetened condensed milk, but you could probably substitute the Whipped Tofu Topping from the Joy of Vegan Baking (or another similar recipe online) but the Whipped Tofu Topping would be easier, I think...

Like this one from vebweb: Sweetened Condensed Soya Milk (replaces Eagle Brand)

1 cup instant soya milk powder (not the kind that needs boiling)
(Better Than Milk works great)
2/3 cup white sugar
3 tablespoon margarine
1/3 cup boiling water

1. Mix the soya milk powder and vegan sugar in a bowl
2. Melt the margarine into the water
3. Add the wet ingredients to the dry
4. Beat with an electric mixer 2 minutes
5. Refrigerate overnight
6. Keeps 1 week refrigerated

Makes the equivalent of 1 can of sweetened condensed milk.

We love avocado soup here. Pop some avos, stock, garlic, salt (and jalapeno) in the blender, puree until smooth. Add some cream if you like. It's good topped with a relish of chopped red pepper and roasted corn.
