When I use them I find they definitely need to be on a tray of some sort and the thinner ones do better in a muffin tin. They are a bit floppy on a flat tray.
I have some slicone muffin trays and they too are easier to deal with if they are on a flat tray in the oven. They are a little harder to get the muffins out but that could be because they are mini ones.
I've found plenty of other uses for mine, they are great for freezing stock, making jellies etc.
I am also in the UK and haven;t had any trouble finding muffin papers though, all my local supermarkets have them.
