Potatoes -homegrown vs. storebought

Why do my home grown potatoes make so much more of the white foamy stuff on top of the saucepan than the storebought ones do? Are they safe to eat? What is that foamy white stuff, anyway?

The foam on the top is starch from the potatoes. I'm not sure why your home grown potatoes have more than store potatoes but it's probably because yours are fresher and the starch hasn't broken down as much yet.

It's safe to eat but some people prefer to skim it off the top of the pot.
