Healthy chicken fingers recipe?

We are having a halloween party tomorrow, and DS has decided we need to make "witches fingers" which he says are made of chicken. I'm looking for a good, healthy recipe.

I usualy take the chicken 'fingers' and dip in milk and egg mixture Probably 1c milk to 1 egg, I don't measure
Then coat in whole wheat breadcrumbs that has had seasonings tossed in. Again I don't measure so I just put in some salt pepper, onion powder, garlic powder, sometimes paprika or chili powder(just a touch) ect....What ever I grab to put in.

Then lay them out in a baking sheet and back at 350 till done.

I cut up boneless skinless breasts into the size I want, dip in an egg and milk mixture and then toss with bread crumbs (or ritz crackers) and seasonings. Then bake until they're done.

You could also stick an almond on the end to look like a fingernail!!!!
