White wine in a recipe?

I have a recipe that calls for dry white whine. I don't have any in the house and am wondering what I could substitute in place of it?

It depends on the recipe... sometimes I use chicken broth, sometimes I use grape juice.... really depends on the flavor of the dish...

I would love some answers for this also. I usually don't make recipes that call for wine just because I hate to make a special trip to the Liquor Store (they don't sell wine in grocery stores here). But, I guess it does depend on each recipe.

I ran into this last night. I wanted to make carbonara, and I was out of wine. It was a small amount (1/2 cup), so I subbed water with about 2 T of rice wine vinegar. It was the mildest vinegar I had in the house. It worked great, did a good job deglazing, and you couldn't tell the vinegar was in there.

In case you happen to have vermouth around, you can sub that for dry white wine.

Otherwise broth, light juice (apple or grape), or just water.

You should pick up some cooking wine next time you're at the grocery store. It's what I always use in recipes. It should be in the same aisle as the vinegars and such. I hate wasting a bottle of wine when I only need 1/2 a cup or so. I'm not a big drinker, so finishing off a bottle isn't really an option for me.

For instance, I make chicken marsala with grape juice. Same flavor, but that way my DH can bring the leftovers to work for lunch. My pulled pork recipe used beer, but once we went gluten free, it was a PITA to find a safe beer, so I switched to black cherry juice and water for the same flavor. Chicken mirabella, I just use chicken broth. I do use wine if I have it for some dishes, but out of necessity, we've figured out some alternatives. I don't ever use "cooking wine" though. Ick.
