looking for recipies for roll cookies/cut out cookies and uses for cookie cutters

So I have made sugar cookies once and they did not turn out very good. I just bought some abc/123 cookie cutters and would like to make some cookies to use these cutters with with ds. Anyone want to share some recipies? The healthier the better but they are cookies after all.

Also other uses for the cookie cutters, they are plastic.

We have a huge thing of cookie cutters (ABC's, 123's, animals, all holiday themes, sports, cars/trucks/planes, etc). DS doesn't eat cookies. LOL! We bought them on the therapists suggestion because ds has autism and a lot of feeding issues. Things have to be the same way every single time with no deviation. This was a way that he could see it is the same food, just in a different shape. 2 1/2 years later we've finally gotten him to where he'll accept *most* of his favorite foods being a different shape. We use them for many other things. Sandwiches, pancakes, french toast... a couple days before Halloween I made him french toast shaped like cats, pumpkins, bats, etc. He LOVED his "spooky french toast".

it's non food, but you can use cookie cutters to make shapes to applique on stuff and they're fun with playdough.

Sandwiches cut into shapes are fun for holiday lunches.
