Whats for dinner this month?

I am looking for some inspiration...

We are having Indian curry tonight with lots of veggies and garbanzo beans. I need new ideas for the next few weeks!

We just did a menu plan for this week.
Today: Buffalo steak, acorn squash, salad
Monday: Tacos, raw veggies
Tuesday: pasta with homemade sauce, sauteed spinach
Wednesday: savory veggie and cheese pie
Thursday: veggie pizzas
Friday (DH cooking day): Buffalo burgers, fries, some sort of steamed veg.

Highlights from last week included homemade spanakopita and chicken in an onion and cider vinegar sauce with roasted potatoes. Coming into the rotation soon: stuffed acorn squash, minestrone soup, and middle eastern chickpeas with spinach.

This is our menu for this week:

Tonight: pork chops, potatoes & green beans
Mon: spaghetti & meatballs w/ green beans or carrots
Tues: stir-fry over rice (chicken, cauliflower, peppers, onion, whatever else I think of)
Wed: fettucini alfredo (homemade pasta) w/ chicken & peas or green beans
Thurs: leftovers
Fri: leftovers
Sat: eating at a wedding

Our menu recently:

Saturday: Beef stroganoff over rice with corn
Sunday: Roasted red pepper alfredo (veggie pasta) with chicken; garlic asparagus
Monday: Beef stroganoff over noodles; carrots; broccoli; salad (fresh veggies from farmer's market today.....MMMmmmmm; rest of beef stroganoff from Saturday)
Tuesday: Rice and beans with red peppers and perhaps sausage
Wednesday: Taco Night
Thursday: (I am attending a lecture; DH is taking DD to Art Night at her school) crockpot soup....thinking chicken and veggies (whatever is left from farmer's market)
Friday: leftovers or meatloaf
Saturday: meatloaf or leftovers

We mostly eat the leftovers for lunch the next day, but it depends on quantity. If there is enough for three, we eat it as a second meal. If less, then it becomes lunch for someone. Leftover night comes about when there are enough bits and pieces for us to enjoy a buffet-type dinner where we each get whatever we fancy the most.

i love reading what everyone else's meal plans look like - it really does help me expand our usual meals.

last dp made dinner: pan fried caribou, mashed potatoes and salad. it was so good.

tonight since we have more thawed caribou sitting in the fridge, i think i will make an asian stir fry with caribou and veggies.

Tonight I'm doing an easy yet tasty dinner - tuna melts

Hhmm what else have we had lately. Broiled steaks with roast potatoes, home-made buffalo wings with asparagus and oven fries, and now my mind is blanking out

Tonight is cowboy spaghetti (yum) using whole wheat pasta and a large salad (including baby spinach) on side. Tomorrow night am making cod fingers, mashed taters and roasted cauliflower and Friday is chicken stroganoff (all "real") over egg noodles with salad on side. Yum!

We just moved, so I am not feeling inspired looking at all these BOXES to unpack

Yesterday: Stew + fresh bread
Today: Chicken stuffed with apples and cranberries + string beans + bread
Tomorrow: Steak + garlic mashed tatos + salad

That's all I have planned thus far

This week:

Sun-roast chicken (legs) with parsnips & sweet potato roasted in the fat with garlic & thyme and brussel sprouts.

Mon-Root veg hash with leftover chicken & cheese and fried eggs.

Tues-Chicken fajita, refried beans, cheese & creme fraiche served on lettuce.

Tonight-Chicken curry (indian), flatbreads (GF, made with coconut flour & almond meal) and cauliflower pakora.

Not sure about tomorrow yet but thinking something with the last of the chicken and some mozzarella that I got for half price yesterday.

Fri-Pork ribs (probably with a HM bbq type sauce) and coleslaw.
