1- super delish salad, boys cooked brats out on the grill for football game

1. Coconut curry butternut squash soup, baby green salad, pita chips with red pepper hummus
2. Breakfast for dinner~scrambled eggs, bagels & maple sausage, tea & OJ
3. Sausage peppers, onions & garlic grinders with mozzarella, spinach salad
4. Roast chicken, mashed potatoes asparagus & salad
5. White bean & escarole soup with homemade stock, bread & salad
6. Left over night

2 - Spinach soup with hard boiled eggs and no-knead bread
3 - Soup made with oxtail broth leftover from last night and oxtail meat, mung beans, carrots, onions and spinach. And bread.

01 - leftover smoked brisket
02 - stray meat - one steak, two porkchops, plus salad and pop-open crescent rolls
03 - cheeseburger burritos (DH's recipe, ground beef, cheese, ketchup and pork and beans.)

I really need to try and keep our costs down this month so I am trying something new to us. I have the fixings for 7 meals in the house (X4) and we will be having the same things each week. The days may vary as it will depend what I am in the mood for. Most everything had leftovers for DH or me to take to work. So don't be surprised if you see the same things a few times. LOL I do have a few "I don't wanna cook" or "I don't feel like that" things in the house as well. So we don't run out to Subway.

I am dieting and trying to budget so squash will be my veggie of choice this month. LOL We both work FT so I aim for simple.

1. salmon cakes, asparagus 1 meal
2. chili (me) chili mac for DH, acorn squash 2 meal
3. turkey/onions over rice (dh) over acorn squash for me 3 meal
4. pizza 4 meal
5. enchiladas 5 meal
6. eggs and toast (I didn't feel like cooking)
7. japanese shrimp with fried rice (I went to store for stuff- not on our rotation but not eating out either LOL)
8. japanese mum's chicken 6 meal

I do really well posting the first half of the month then I get super lazy. I'm going to try really hard this month-Everything vegan unless stated I'm also going to keep track of "extra" cooking I do,to overlap into other meals...it'll help me make sure I use up everything

1-FFY-Dh had a gig over dinner, ds wanted potatoes w hemp seeds on them...so it was a lot of snacking happening
2-Vegan Dad's chickpea patties/"cheesy" scalloped potatoes/roasted butternut squash/romaine lettuce salad w roasted apples/sundried tomatoes/butternut squash roasted seeds YUMMY DINNER
EXTRA COOKING- extra chickpeas&squash/broth out of apple cores/squash peel/onions to use to cook rice later this week

We cook dairy-free vegetarian at our house.

1. Brown rice pasta alfredo with portabello mushrooms and artichoke hearts.
2. Lentil loaf with gravy, roasted brussels sprouts with onions and apples (YUM!), and roasted winter squash with earth balance and brown sugar.

DH is the chief cook, but I'll be posting my contributions when I cook or plan the meal. I'm hoping to use what's on hand and really clear some things out of the pantry and freezer.

1 - Made a big pot of beans in the crockpot
2 - Lunch o' leftover, Dinner - Pancakes and bacon
3 - Lunch: pasta w/ bacon; Dinner: sausage, cheesy grits, spinach salad

I'm in this month. We are super duper broke, dh broke his hip in September, and I'm working less because of it and his disability is almost nothing. Anyhoo...
1 - taco salads with smoky black beans, romaine, rice, carrots, and salsa
2 - chickenless nuggets, rice, black beans, and steamed broccoli
3 - baked pasta with tomato sauce, mixed vegetables, and cheddar

I've never posted on this thread before, but I do try to make all our meals at home. I wonder if I'll be able to make it all month!

1. inlaws in town, so we ate out (dang am I already disqualified? )
2. roasted red pepper and bean soup (ack, it was awful, and there's a whole giant pot of it left!)

Jumping in here! I'm a full time WOHM mom and do most of the cooking even though dh is home. Even if he does cook, I've planned it! But, since we have a 4 year old and 7 mos old at home, I've already forgotten what we ate for dinner on Sunday.

We don't eat out much. And since we moved 3 weeks ago, it'll be even less since there aren't very many take out places near our new home. I'm good for ordering in on Fridays when I'm tired from having worked all week. Not being able to as readily will help eliminate that!

1. Baked chicken (I remembered!) marinated in Mojo; arroz con gandules and maduros
2. Beef noodle casserole, french bread, cucumber and tomato salad
3. Left overs from the 2nd
4. Left overs from the 1st with broccoli instead of maduros
5. Planning on orange chicken if I can get to the market today.

I'll join in! I have GOT to stay on budget this month for sure - we're trying to have our debt paid off in 2 years or less, so I need to be better (by FAR) than I've been over the past while!

I'm listing what I remember for this month so far (mommy brain lol):

EXTRA COOKING-made pumpkin puree out of the pumpkin that never got carved. Made 1 loaf of pumpkin bread and am planning to freeze the rest of the puree to make pumpkin bread for xmas presents. And black beans cooked to make ds refried beans for lunches
