Tonight we had this awesome vegan alfredo sauce over brown rice spirals with seared portabello mushrooms and artichoke hearts. Soooo good!

Tonight we had lentil loaf, mashed potatoes and broccoli. DH and I loved it. The kids thought it was OK. We also had some awesome homebrew, so that made it even better

Would you mind sharing your lentil loaf recipe? I eat lentils and rice a lot(grew up on it), but never as a loaf...

Here's the one I made tonight. http://www.ivu.org/recipes/main/lentil-loaf.html It's really easy and tasty. I used bbq sauce and I think it goes really well with the lentils.

My MIL took our leftover Vegan Dad Vegan sausages & put them in a pan with sauteed onion, tomato & some of her chili/hot sauce. They were awesome. We had them over red potatoes

What is the consistency supposed to be like in a lentil loaf. I made the one posted, cooked it for an hour, and it has been cooling for 20 minutes, but when I tried to get it out of the loaf pan, it turned into slosh. Is it supposed to keep its structure....

No, it's definitely supposed to keep it's structure and be relatively meatloaf like in texture. Hmmm. I haven't made the recipe posted, but is there a chance your measurements were off? I've actually never had that happen. The consistency of the uncooked mix should be much closer to a muffin mix (or thicker) than something like pancakes or cake batter. If it's not, I would add uncooked oats until the consistency was thicker and then bake as directed.

ETA: I just looked at that recipe and I'm wondering now if you are supposed to drain the cooked lentils before mashing them with the onion. Lentils are funky - sometimes they absorb a ton of water and sometimes not (I think it depends on how old they are). I'm guessing that was the problem. For that reason, I prefer recipes that list for a specific amount of cooked lentils (i.e. 1.5 C lentils, cooked) instead of how the directions listed them for this recipe.

Tonight we had leftover lentil-pecan pate (1,000 Vegan Recipes) topped with Thick and Rich Gravy (ED&BV), with roasted brussels sprouts, apples and onions (The Vegan Table) and roasted winter squash with earth balance and brown sugar.

Tonight we had Fajitas - peppers mushrooms onions and quorn with green chili sauce, pintos guac and s. cream and sharp cheese. mmmmmm

the rest of this week.
sweet potato enchiladas and slaw
homemade pizza and salad
french butternut gratin and kale chips
Spaghetti squash with spinach mushroom cream sauce
green chili cheese fries

i also made today pumkin ginger scones... super yum. my husband is in love.

Not mind-blowingly original, but the Chickpea and Vegetable Curry is DELICIOUS. My DH moaned with pleasure every time we ate this (the first night and all the leftovers ).

We just had Crispy Tofu with Caper Sauce tonight and it was delicious, too. I think I would maybe sprinkle on some poultry seasoning on the tofu before the cornstarch to add a little tiny bit of extra flavor, but the caper sauce is so strong and delicious that it's fine as is. We had this with the rosemary fingerling potatoes with caramelized shallots and those were really good, too.

I really want to try the soy-tan cutlets, but dang DH has a sensitivity to gluten, so I'll have to wait until he goes out of town.

Tonight I made a chickpea/rice/broccoli casserole.. loosely based off VWAV recipe.. subbed 2/3rd of chickpeas for pre-cooked rice, and nut-yeast/soymilk for the vegbroth (plus about a cup extra soymilk). It was SOOOOO good!!! DS1 ate sooo much of it! I will try to do that one more often!

tonight is spaghetti and "meatballs" with homemade marinara, of course. i was feeling lazy so i just threw some spinach in with the marinara cos i didn't feel like making a side dish.

We are having a few friends over for dinner.. I'm making pumpkin coconut soup, and I don't know what everyone else is bringing.. hopefully some crusty bread and a salad.
