Ha! It's probably because I'm 7 months pregnant and I'M always hungry!

Last night my mom made baked ziti, with salad and italian bread on the side. My toddler declared it "dewicious" and "perfect" and had 2 helpings.

Tonight we had lentil loaf, mashed sweet potatoes, stuffing, corn & green beans. It felt like 'healthy' diner food

I made a not meat loaf from the magical loaf studio with lentils and millet. Its the first loaf I have had turn out like a loaf. It actually kept its shape and cut like a loaf.

I did a loaf from the magical loaf studio too. The flavor was good but it really wasn't I was looking for. Served it with garlic mashed cauliflower though

Tonight I made vegan Broccoli & Cheese stuffed baked potatoes. Basically this recipe here:

Except I left out the soy bacon bits. (I don't like regular bacon so why would I want to eat a fake version?)

I probably used way too much broccoli (if there is such a thing) because I had a lot of extra filling after stuffing the potato halves. But it worked, because I put the extra filling into a gratin pan and baked it along with the potatoes and I used that for my 5yo's portion. He would not eat potato skins anyway. I would definitely make it again, but next time I would put some Earth Balance or olive oil on the bottom of the potato shells before stuffing them. The skins needed some more moisture and flavor ont he bottom.

On the side, I made Cranberry Cole Slaw. Basically shredded cabbage, carrots, dried cranberries and slivered almonds tossed with Veganaise and a little lemon juice. Yum!

Breakfast was fruit and crockpot hot cereal. Kamut is really good, folks!

Lunch was leftover chili, bread, and leftover lima beans.

Dinner was crockpot french onion soup, salad, and bread.

Last night was spagetti & tofurky Italian sausage.

Tonight will most likely be chik'n patties, spinach pie (frozen from TJ's) & fruit. We are trying to clean out the feezer.

We had a "dinner shaped dinner" last night - it was a bit of an experiment. I made the Mushroom Gravy from V'con and dumped a bag of (thawed) Soy Nuggets in there- it was heaven. Oh, and mashed potatoes and broccoli.

This is another idea I lifted straight from the Whole Foods deli, I freely confess!

I opened a new bag of organic baby carrots this morning and discovered that they were covered in slime. It wasn't water, it's was slimy. ugh.

T-day dinner was the best of the best...all the side dishes, lol.
Stuffing, green bean casserole, mashed potatoes with punk rock gravy, cranberries, sweet potatoes and rolls. ANd pumpkin pie for dessert.

Last night was a typical Tday feast - Tofurkey, mashed potatoes & gravy, sweet potatoes, green beans & salad.

Tonight will be frozen cheese & spinach ravioli. I bought 3-3lb bags of our fav ones from Costco a couple months ago when they ran a coupon for them

I made great use of Thanksgiving leftovers tonight- Shepherd's Pie.

I chopped up leftover seitan and sauteed with some onion. Then I imxed it with leftover Tofurkey gravy, peas, and corn. Spread that in a baking dish and topped with leftover mashed potatoes and baked for 40 minutes. Served with leftover cranberry relish on the side - yummy!

I'm feeling the excess of the holidays already! Felt the need to try out the raw diet for a bit. So today's dinner is massaged kale salad and eggless egg salad. Hubby is also having leftover green beans almondine and lemony potatoes.

we have been stupidly busy!!!

MOn--took some black beans out of the freezer and threw them in my clay pot with some wild rice and a bag of frozen veggies...awesome! served with avocado slices and salsa

Tues- Tomato Bulghar Soup from Moosewood's low fat cookbook...served with whole grain rolls and some raw veggies (kids had pasta at school for lunch so I wanted to focus on the veggies)

Tonight--baba ganoush, leftovers from Monday, guacamole and veggies, big salad....kind of an empty the fridge night
