Side dishes

I am having side dish issues again. I can not think of how to round out a meal anymore. This is partly because my kids are picky & not too fond of rice or potatoes & will only eat very few veggies. What are some typical side dishes (with recipes when necessary) in your house?

My stand-by is roasted broccoli or green beans. Just toss with olive oil, salt and pepper and roast on a cookie sheet in a 400 degree oven. It only takes about 15-20 minutes and it is something that can cook while I prepare the rest of the meal. They get really yummy and crispy and my son loves them that way. (no mushy vegetables!)

We eat alot of stirfrys, pasta dishes ect. so not alot of side dishes BUT when we do some of ours are:

-stirfried baby bok choy/garlic/onions w vegetarian oyster sauce
-green beans w tomatoes/onions/garlic/white wine and pine nuts
-roasted squash
-roasted eggplant
-roasted potatoes
-corn fritters
-bean salad
-jamaician rice and peas
-fried rice

I made maple glazed carrots the other day and they are amazing! Soooo easy too!

carrots chopped length wise
boil them until soft (or steam)
drain water
add a spoon full of margerine and a couple Tsp maple syrup
boil on low, stirring to coat carrots
They are done when the glaze has thickened and the carrots taste oh so sweet!

Our favorites are probably oven fries and roasted broccoli (or other cooked broccoli). We also love cauliflower (roasted or cooked with indian spices, prefereably).
My favorite is sauteed spinach with garlic oil and a bit of lemon juice (dd doesn't like that though).

Mashed white beans are also very good, with a little garlic, butter, maybe some veg broth, and herbs.

We do roasted veggies but my kids wont eat many cooked veggies as they don't like the texture.

caiesmommy- do you have a recipe for fried rice (mine never comes out right), jamaician rice and peas, or corn fritters? I think they might try those.
