I have experienced some of this, as I'd give it up for several days, then the day after I eat some grain (even properly prepared barley in a beef stew) I feel my joints all inflamed again. I don't think I'll give up dairy unless I need to (for a future child or something like that), so I don't think I'd be entirely Paleo. But the information on the sites and on some of the Paleo food blogs I've been reading is helpful.

There are lots of paleo-ish folks who also do dairy. I think lots of folks believe agriculture and therefore the use of grains happened separately from herding and using animal milk. SCD and GAPS diet recipes are grain free but use some dairy (the cookbooks look pretty cool, if you do dairy!). Here's a link: http://www.scdrecipe.com/recipes/
I plan to do dairy again some day--either because my ds will tolerate it or because I'll eat it w/out him...we are working on gut healing (and I'm hopeful cultured dairy at least will be back on our menu in the not-too-distant future!) http://www.marksdailyapple.com is a paleo+dairy site I believe...
