Good way to increase weight

Seeing if anyone knows off hand, a good way to intoduce healthy calories into ds food to help him gain weight? He's really into that stage of not eating much/being picky. What I make is what we eat, I'm not catering, I feel like that gives them too many options on if they want to eat or not, and throw a tantrum if they don't get what they want.
Anyhow, ds1 is small. He's tall, but he's low on the weight scale. I shouldn't be too concerned, since dh and I are average height and thin, but every day ds gets dressed, I just can't help but notice his thin he is. He literally has no fat around him.
I know coconut milk has a lot of calories, but I don't know how healthy that is is on a regular basis. I've looked at those pedia sure things-but those have so much bad stuff in them.

I don't cater either, and have been trying to get DS to eat more calories cause' I have the same problem Heres a couple things I've been doing lately:

Pushing milk with protein powder from Juice Plus - makes it chocolate flavored and he loves it.

Putting LOTS of butter on anything I can - pancakes/french toast/waffles, pasta, green beans, etc.

Offering whole-milk mozzarella cheese sticks anytime he says he's hungry.

And I just made pudding for the first time last night to offer afer his main meal at lunch time - made with whole organic milk, free range chciken eggs and organic sugar, corn starch & vanilla so its actually pretty decent.
