I take this Holiday very seriously and believe that it's never too soon to start planning. For those of you veg*ns celebrating it, what will you be serving? I'd love some ideas!

I LOOOOVE thanksgiving!! No one but me eats entirely veg. I do a little eggs but not dairy. We only have one not veg thing anways and my mom does that part.

So far for sure things are creamy baked mashed potatoes (i make them, put in a casserole, the day or two before, then dot and bake until browned on top). This saves time on the big day.

A couple kinds of stuffing, my favorite is a more classic with nuts and sage. I'm alraeyd starting to bake extra bread to stash dried cubes.

a simple veggie mix, just steamed carrots/brocolli peas with salt/butter since the kids love it simple.

I'm making some kind of chickpea cutlets with mushroom gravy for me, and in to balls for DD (she doesn't eat much non veg either) or maybe in to a loaf. I season it with onion/garlic, mushrooms, sage, paprika, lemon zest, thyme

Stuffed squash, OR a squash and pesto lasagna, i'm probably going towards the latter since i make stuffed squash often

Not sure what else, i'll be adding stuff for sure, it seems my mom and i spend 3 days planning/cooking and we have food for the next week and the freezer!

I make a couple kinds of bread/rolls. Always potato rolls since they are so soft and keep well a day or two, and I make them the day or two before while i make the potatoes, then partially bake just like those 'bake a few minutes and serve" ones you can buy.

DESSERTS, what really matters

Pumpkin pie, I made THE best no bake with a graham cracker crust. It's so hard to find a good vegan one, and I've discovered I MUCH prefer the no bake type

Apple pie, blueberry pie, and pecan pie. My kids and mom and I spend hours literally covering her kitchen with flour (the kids make one ALL their own, fun times LOL)

can you pleeeease share your recipe for veg. pumpkin pie. no bake sounds wonderful since my ds is not ready for me to spend the amt of time it takes to make the traditional kind. lol plus: its so true, i've yet to find a good vegan pie recipe.

we are going to my sister-in-laws for dinner this year (she jsut moved back to NY after living in Vegas for 10 years)... and are very much NOT veg*ns at ALL...

so i'll be checking back for ideas of what i can make/cook/bring for the family meal that i can have a bit of too!!

Yep i will, i'll probably post it in another thread, I'm actually wondering if anyone will make it and tell me if it turns out well

I want to try this seitan roulade (http://veganyumyum.com/2008/11/a-yumyum-thanksgiving/) but I'll have to give it a trial run first. Or maybe these mini pot pies with mushroom gravy (http://vegandad.blogspot.com/2009/10...h-roasted.html). Definitely stuffing for myself and probably some sort of roasted root vegetables.

Would love the no bake pumpkin pie recipe!

Sunset.com has both a vegetarian and a vegan Thanksgiving menu posted. The vegetarian menu look mega-good.

We are having:
Vegetarian stuffing (just the regular crouton kind with tons of sage)
steamed green beans with toasted almonds and butter
mashed potatoes
brussels sprouts with chestnuts and maple butter (greens cookbook page 259)
Romaine hearts and parmesan with lemon vinegrette
broiled tofu (veganonmicon)
homemade cranberry sauce.
mushroom gravy
pumpkin pie

(and a small turkey for the meat folks.)

Having a very casual all-veggie thanksgiving this year (in pj's, probably), since dh works and just my sister is coming over and doesn't mind like other relatives would. She's requested trying the tofurky, which will be fun cause we hardly get those and I've only tried it once. Plus, we request extra pies for our thanksgivings in general.

So ours is:

Tofurky
Buttermilk mashed potatoes
All-scratch green bean casserole with fried shallots
Sweet potato rolls
Cranberry & golden raisin chutney
"Pumpkin" cheesecake (with butternut squash)
Pumpkin pie (hers)
Ginger pear and cranberry tart
** another dessert? TBD here?

A Tofurkey (I love the stuff and my in-laws want to try it)
garlic smashed potatoes
sweet butternu squash casserole
roasted green beans with pine nuts, dill, and currants
homemade cranberry sauce
and for dessert- Bryanna Clark Grogan's pecan and pumpkin pies

We are having a potluck with friends and family at our house. I'll make tofurkey, mashed potatoes, and gravy. Whoever else wants to bring whatever they want to bring can I usually make 5-6 things every year, but I stress myself out and don't want to do it this year.

Thanks for the suggestions. I've finally (and tentatively) pieced together a less-than-traditional menu.

Chestnut Fennel Soup with Apple Walnut Chutney

Savory Rosemary Scones


Some sort of salad tossed with dried cranberries and candied pecans

Some sort of "mapley" winter squash/root vegetable gratin


Mushroom, Cheese, and Vegetable Strudel


Harvest Pear Crisp with Candied Ginger (in Nov 2009 issue of Bon Appetit).

homemad seitan "turkey" (this is sooooo good!)
mashed potatotes
gravy
homemade cranberry-orange chutney
peas
stuffing (my favorite part! with pecans, apples, celery, onion)
3-flour braided bread (white, wheat, rye) this is a huge tradition, but I'm consdering not doing it...a lot of carbs!

dessert: from scratch pumpkin pudding with homemade graham crackers on the side; maybe sauteed apples with spices, too

It's juts me, DH, and DH's mom, so a pretty small gathering

Here's our plan. We'll be eating with 4 omnis, but the sides will be vegan.

Veggie Turkey with Wild Rice and Cranberry Stuffing (mom got it at whole foods for us )

Gravy

Mashed Potatoes

Crapple ( My mom accidentally renamed this one year. It's a cranberry apple crisp type thing with buttery oatmeal topping)

Cornbread stuffing (courtesy of my grandmama)

Cranberry-orange relish

Something green beany probably

Pumpkin Pie

Hopefully Pecan Pie!
