Let's share our favorite meals when you don't have the time/inclination/energy to spend more than 10 min prepping a nutritious meal.

Ok, I'll start:


Our favorite quick meal is what we call Giant Salad, where we throw baby spinach, other greens, veggies, nuts, protein sometimes cheese etc. and dressing together. mmmmmmm

Tonights salad was: shrimp, some bacon, tomato, cucumber, red bell pepper with a homemade garlicky dressing. Very filling, and healthy!!!

Spring rolls.

Shrimp (i buy it cooked or broil it real quick) spinach, sprouts, cucumber, carrots whatever, a little plum sauce and rice papers.

Served with random veggies and/or rice

What I like to call a Continental platter:

fresh fruit (grapes, sliced apples, whatever is on hand!)
sliced cheese
sliced fresh (store bought) bread or crackers

Comfort Meal:
Amy's tomato soup
grilled cheese

Hearty and quick stir fry of:
leftover starch (rice or pasta)
frozen veggies
tofu or leftover cooked chicken
sauce of Braggs and honey and lemon juice

So last night we had a 10 min meal. We had scrambled eggs with cheese. It would have been better with broccoli, onions and red peppers but that did not happen. We had a side salad instead.

My quick meals are schnitzels, sausages, steak, hamburgers, liver and anything that can fry quickly.

We do the continental meals as well.. usually several types of cheeses, nut spreads, veggies, fruit, boild eggs, bacon on sourdough toast. This can be served for breakfast, lunch or dinner.

Corn dog muffins
Corn bread/muffin - scratch or box mix.
Hot dogs cut in 1/3 - they can be the good ones
Make batter and spoon into muffin cups, place 1 piece of hotdog in each muffin cup
Bake at 400* for 15min

Serve with applesauce and peas.

These are all great!!!!

I love the continental platter! We do that for lunch sometimes, but I'm totally going to keep it in mind for dinner on those nights where quick and easy are needed!

Those corn dogs sound so cute! You could do those as an appy for a party too!

Vegmom, how do you make your schnitzels?

I need help with this, so keep the ideas coming!!!

We're probably going with hamburgers tonight due to the adults being unusually tired and all of us heading to Family Art Night within 25 minutes of DH getting home from work. We thawed hamburger meat and I was supposed to make a meatloaf, but it sooooo did not happen. We had taco night earlier in the week and DH is tired of pasta and meat sauce these days. (I can always eat that! LOL) I think hamburgers combined with the "continental platter" idea will be perfect! Thanks!

If we want something *really* quick then eggs or beans on toast.

Quick meals which require slightly more effort are

- baked potaotes (or microwaved) with butter, cheese and (bought)coleslaw
- lentil curry; 2 tins of lentils, a jar of korma sauce and some frozen peas/corn, with rice or roti bread
- fettucini tossed with steamed brocollini, crumbled fetta and toasted flaked almonds or pine nuts

Stir fry with a bag of frozen chinese veggies from whole foods, trader joe's teryaki sauce, sometimes tofu, and soba noodles

Quesedillas with frozen spinach, canned refried beans and cheese

Mini ravioli's from trader joes with a can of tomatoe sauce...

We usually eat quesdillas at least once a week.

French Toast
BLT's or Fried Egg Sandwiches w/ Lettuce & Tomato.

I also keep precooked then frozen items in my freezer for quick meals:
rice, ground beef, diced chicken, bacon, spaghetti sauce (I make my own), and beans/lentils. I can mix and match very easily with some broth or sauces and add in some veggies or cheese.

i made tacos today. It *might* have taken a little more than 10 min but not much. The amount of time it takes to brown some beef And stir in a can of black beans. OK It took 5 mins. to saute onions before adding the beef. Never mind it might be a 20 min meal! but i like the thread.

Nachos! We use everything flax seed chips, salsa (tons from our garden) leftover chili and shredded cheddar. Yum

We did end up having grilled burgers and a continental platter last night and it was a big hit. THANKS!!!

OT - but I was asked - Family Art Night is a program at my DD's school (public elementary). It is sponsored by the PTA and run by a mom-owned small business called Art Corps. It has been running for over 20 years now! Art Corps is contracted by the PTA to run the official art program at the school (since formal art was removed from the curriculum eons ago....don't get me started) and utilizes parent volunteers. There are art instructors who come to our school to teach each formal lesson to the parent volunteers (in small groups, by grade level) and then the parent volunteers teach the lesson in every classroom. I have either taught or assisted in each of my DD's classes, so I know a lot about the program. However, the main point (although subtle) of Family Art Night is to introduce all parents/families to the program and to have fun doing art together as a family with school friends, etc. There are two nights each Fall and one night each Spring. There are 3-4 projects to choose from and each family chooses one to do. There is a "famous artist" to learn about and then an art project in that artist's style to do. Last night, our DD chose the Eric Carle project. She created a butterfly; I created a flower; DH created a caterpillar on a tree branch. They are all going up in her bedroom. We sat with a family we've known since the girls were infants (now they are 3rd graders), although we had lost touch between ages 2 and 5. It was a really fun time!

OMG this is so so so SO awesome. I'm going to pm you for more info, maybe I can implement something like this in my little village.
