Any of you have a bean or lentil based bread recipe, or have ideas on how to make one? I'm wanting to make a grain free bread, and I can use eggs, coconut milk/oil/flour etc. and want it to be partly made of sprouted, precooked lentils or other beans. I also would like to try to avoid gums and starches, (I'm hoping to use coconut flour in place of starch) but any ideas are appreciated!
I was looking at this recipe and trying to think how I could convert it to a bread instead of cake. I've used sprouted, cooked beans in this recipe b/4 and it worked well, so I'm thinking lentils might work as well if I can just transform it from sweet and cake like to savory and bread like...
