Healthy Bread in 5 Minutes A Day tribe

Hi Mamas, this new version of the book was released in late Oct. and I'd love to chat with other mamas about Healthy Bread in Five Minutes A Day. (The first version was Artisan Bread in Five Minutes A Day.) I just mixed up my first batch yesterday, but have yet to bake any.

Anyone else? What have you tried so far? I'm excited about trying that wreath at the holidays; it looks so pretty.

Oooh! I don't have the first book but have used the recipe from Mother Earth News. Keep us posted on the bread. Sounds like something good to add to my Christmas list!

Time to bump up! There must be a few mamas who have tried the new book!

I'm baking the wreath as I type. I'm excited, but I think my technique in cutting/arranging the dough needs some work.

ooh I want to get in on this! wow this is checked out at every library in the area!! good news is that my library has it and it's due back the first of december. I have been experimenting with making bread braided or otherwise a little fancier lately, though nothing so elaborate as a wreath! I will definitely check this book out, although I do enjoy spending more time on bread, I could definitely use a quicker method sometimes. I just do my own thing with bread, but then it's always good to return to some specific method every so often. Another score from my library was this two-bit DVD entitled "Video Bread." I didn't follow his exact recipe because it required a good thermometer, but just appropriating some of his methodology, my very next loaf was the fluffiest I ever produced!

Well, I wasn't too impressed with the wreath, but that's partly my fault. It looked more like a sun with rays coming out, LOL. And the crusty exterior may be great on a loaf of bread, but I don't care for rolls that way. Next time I'll try it without the steam tray and see if I like it better.

I read the first book, can you tell me a bit about this one? What is different, is it focusing on whole grains? Thanks!

Yes, whole grains, and they also include a lot of other things like healthy add-ins (veggies, nuts, etc) and a gluten-free recipe as well.

wow I am the ELEVENTH person in the hold line for this book at my library! She said there are fifteen copies, but surely she means in the greater area.... so I have no idea, she just said it wouldn't be that long. checking out the site in the meantime...

Finally have the book, am still in the equipment section :P I picked up a couple other cookbooks I am very excited about too so it won't be all about the bread this weekend, but I definitely need to make at least a couple loaves between now and Tuesday. So we'll see...

I am glad to hear they have come out with another book! I love the first one and I adapted the recipes myself to make them healthier. This new one sounds like it could be a great gift idea!

I knew there was a thread on here somewhere... Quick question - what do you guys use for dough storage? All the containers I see online or recommended are BPA plastic Are there better options that I'm missing? Thanks!

I have some rubbermaid that appear not to have bpa and seem to be a 'safer' plastic:

I'd like to get glass if I can find some, hopefully second hand, but for now I'm using these because they were things I already owned.
They do have a 7 marked on them, but the 7 does not mean they have bpa, it means they are unclassified (not types 1-6 plastics). Some unclassified (7) plastics DO have bpa in them, but many do not.

Thanks, Jessica! Which product do you use? It's supposed to be lidded but not airtight, right? a little confused over here with what exactly that translates to!

I just use what I think is called stackable.
I really dont' worry about the lids much. I put them on loosely for the rise and the first day and then after that put them on all the way. It just means that some pressure may build up from the bread rising. You don't want a lid that would be soo tight that it wouldn't pop off (especially if you were using glass), but then you want to be able to close the lid too, so it stays fresh.

I use a pyrex bowl with plastic wrap on top. The dough doesn't touch the plastic wrap after I've baked the first loaf, so I don't worry too much about it.

I don't have the whole grain book, but I've made the basic whole grain recipe that was published in MEN. It turns out well, but I've noticed that the dough does not keep as long in the fridge. After a week, the top of the dough gets dark and icky looking. On their website, they say to just scrape it off and use the rest of the dough, but I've found that no one here really likes the taste of the bread once it hits that point. Not a big deal, I just make sure to only make enough dough for 1 week.
