Healthy cookie recipe?

My 6yo dd is extremely fussy. I'd like to make some cookies that she will eat, but that are at least somewhat healthy. She doesn't like a lot of textures going on, she won't eat chocolate chip cookies, oatmeal cookies, anything with raisins, etc.

I'd like to make something like plain sugar cookies. I'd like to add flaxmeal but I think I'd have to mask the cookie with sprinkles or something so she doesn't see the specks I don't want too much sugar either.

Anyone have something she might like? I bake gluten-free, but I can adapt most recipes.

Have you thought of hemp seeds?
My 6year old is fime with nuts, oats, seeds etc in baked treats but al lot of his friends are not. My baking always passes the test with his friends, some of whom are very picky.
I put shelled hemp seeds in all baked treats, cookies, brownies, muffins, cupcakes, all of it. They are soft so they don't add texture or taste. You can't see them in sugar cookies, but they sure add a lot of protein and good fats.

My kids like fig cookies. The processed figs are between the two layers, so sort of hidden, but not a clump like a raisin. The recipe is already gluten free.

Also, these peanut butter cookies aren't on my blog yet:

1 c. creamy or crunchy natural peanut butter
1 c. brown sugar or palm sugar
2 eggs
1/2 c. sweet potato starch/flour
1 tsp. baking soda
pinch of salt

Mix everything together. Chill for about 30 minutes. Bake at 375 for 13-15 minutes.

They're at least full of protein because of the nuts.

The peanut butter cookies sound good, I'd like to try them. A couple of questions, is sweet potato flour and starch interchangeable or is one preferable....is there something I could use to substitute as we are remote and it would take some time for me to get some.

Our standard plain cookie is pretty simple but really yummy(I think!) I adapted it to GF from a recipe Snowbunny posted for maple shortbread (thanks!):

1 cup butter, softened
1/4 cup maple syrup
2 cups rice flour
1/4 tsp sea salt
1/2 tsp xanthan gum (but you could probably leave this out if you wanted to)

Cream butter and syrup together, add flour, salt and gum and mix to soft dough. Then I just use my hands to make small balls, flatten, prick a few times with a fork and place on greased trays. Bake at 170C (340ish F I think) for 15-20 mins (until slightly golden.

Or what about this? I've made them with maple syrup instead of the white sugar (but was thinking about trying with whizzed up raisins instead) and they were really good!

During this time of year, we really like pumpkin oatmeal choc. chip cookies. Take the chocolate chips out and they're pretty healthy. I think I found the recipe on recipezaar.
