Vegan recipe to use up a half a head of cauliflower?

My mother gave me a half a head of cauliflower that needs to be eaten in the next day or two. Normally I'd put it in a curry.... but spicy things like that are not very appetizing to me these days, and I'm having a major brain freeze on what I can make. TIA!

That sounds yummy! Silly question- roast it as a whole head or cut the florets off and roast the little bits?

cook on stove in pot with water til soft. drain. in food processor add handful of raw cashews, clove garlic, salt. grind. add cauliflower. grind til consistency of mashed potatoes, yum!

Vegetable curry!

Par boil that cauliflower, add it to a can of simmering coconut milk and curry paste with a tbls or 2 of brown sugar. Add green beans, red pepper, can of garbanzos if you want the protein - cook for 15ish minutes Serve with rice.



DOH. Sorry. Just read that curry is out. Nevermind. lol

I roast it in chunks, the florets and the stems cut up
