SO.. beef stock

What are your favorite recipes to use beef stock?

Personally, I can't stand the smell of it so don't use it that often but, I have a few jars in the freezer I'd like to use soon. How do you use it besides beef stew?

french onion soup!!!!

it scared me for years and years and years, but it turns out that if you don't add the cheese, french onion soup isn't scary (For me.) You saute TONS of onions in beef fat, and then add some seasonings and beef stock, essentially. Its super super super good. I could it tons of it as is. which is strange, since I'm not a huge beef stock person either. but I love french onion soup without the cheese. (Now if you can eat the cheese with it, you might like it with. I think gruyere is classic?)

I LURVE french onion soup. Um... with plenty of cheese on mine please! just no bread!

I love beef stock though. So many applications, demi glaze, gravy (I add 2-4 cups of stock to the drippings of a roast and make tons of wicked tasting gravy. Mmmmm gravy...) minestrone soup, vegetable soup, new yankee pot roast soup, meatball soup, wonton soup, other asian flavored soups... um...

that's all I can think of right now. Man I need to replenish my stock of stocks! hee hee (I couldn't resist)
