soup recipes

What are your favorite, easy, and dairy free recipes. If it uses milk I can use soy milk, butter I can use, sour cream I can use, but I can't do things like condensed milk. TIA

Are you looking for specific types of soup? I just made veggie beef soup yesterday. It's probably my favorite! I cook a meaty soup bone and some stew meat for a few hours in a few quarts of water, strain the broth and pick the meat off the bone. Add whatever veggies sound good; I generally use green beans, corn, peas, lima beans, okra, cabbage, carrots, potatoes and tomatoes. Then I let it cook for another hour or so on low till everything is tender and serve with a nice crunchy, crusty whole grain or sourdough bread.

good question. I am looking for recipes that have protein of some sort and veggies. Especially recipes that use veggies I can find in the winter.

Butternut Squash soup
1 medium butternut squash cubed
2 large carrots chopped
2 celery chopped
1 onion chopped
Chicken or vegetable stock
add all to a pot, boil then simmer for about 45 min until veggies are soft
toss in food processor, puree to desired consistancy
salt and pepper to taste

Really yummy with a toasted baguette

I just came on here to post butternut squash, too! It is SO simple and delicious! I put some pumpkin pie spice in mine (nutmeg, cinnamon, etc.) and it was SO delicious. You can even put pasta in it.

Chicken Soup for Body and Soul Recipe

Extra virgin olive oil, as needed
3-4 split chicken breasts (free-range organic, if possible), rinsed, patted dry
8 cloves fresh garlic, chopped
Sea salt and freshly ground pepper, to taste
2 heaping cups thinly shredded cabbage (bagged cole slaw mix is fast and easy)
1 green bell pepper, cored, seeded, cut up
1 yellow summer squash, cut up
2 zucchini squash, cut up
6 to 8 baby Yukon Gold potatoes, cut up
1 4-oz. can chopped green chiles- mild or hot, to taste
1 teaspoon rubbed sage
1 teaspoon each of: dried basil, oregano and parsley
Hot red pepper flakes, shake to taste
1 14-oz. can Muir Glen organic fire roasted diced tomatoes
2 or more cups organic chicken broth, as needed
A dash or two of balsamic vinegar to taste

Soups are so forgiving which is why I enjoy cooking them so much. You can pretty much just throw whatever you have on hand in a pot with some protein and broth and tah-dah...soup.

Some of my favorite soups we've made are Chicken White Bean Chili, Cannellini Bean and Shrimp Stew, and Brunswick Stew. All are outstanding!
