Give me a good idea for dinner tonight!

Ok here is the scenario. DH and I want to eat a nice/maybe fancy/maybe just delicious meal tonight. He is home today so he can watch DD all afternoon while I cook or something, I am so in the mood for that today!
So what are your recipe ideas?? I can't come up with anything I am excited about.

Not at all fancy but we've been loving cowboy spaghetti lately! A bit more fancy - we make a mean chicken marsala and serve it with baked potatoes and roasted vegetables. Ratatouille is always awesome if you have time!

What about stuffed pork tenderloin?
Fresh seafood pasta?
Puff pastry gallette? (it's like a free form pie, you roll out the puff pastry, put your meat and sauce and veggies in the middle, and fold the edges into the middle like in a pinwheal pattern.)
