baked potato toppings

Thread Starter
I have eliminated dairy, soy, corn, wheat, and beans from my diet because they seem to bother my bf'ing 6 month old. This might seem like a silly question, but I am trying to figure out what to put on baked potatoes. I can't find a margarine-type spread that is free of all of the aforementioned foods, so am looking for other ideas. Thanks!

Mother's Margarine may fit the bill, but I'm not certain. It's a Kosher product available only at Passover and I've never been able to find it.
Anyway, I mash up an avocado until it's really creamy and smooth and put that on top with crumbled bacon and a little salt, maybe some nutritional yeast.

Most of the time I just use sea salt & pepper. But DD2 likes coconut milk yogurt on it (I don't really sweeten it when I make it so it's sort of like sour cream). Gravy.

We use straight coconut milk and add salt and pepper--soooo good. I make mashed potatoes w/ coconut milk as well. (Coconut milk is an AWESOME milk/cream sub, and I think in savory dishes if you add enough salt and pepper you don't really notice the sweet/coconut taste. I've also made scalloped potatoes w/ it--just onions, potatoes, salt, pepper and lots of coconut milk--to die for!!!)

I'm totally going to try the 'sour cream' approach w/ unsweeted coconut milk yogurt Kathy! Sounds yummy!

Salsa!

we're on a VERY strict diet over here, so it's usually just olive oil, sea salt and pepper for us. I occasionally make a gravy out of turkey bone broth and potatoe flour to thicken and put that on there for a change!
