Easy, Fast Homemade Ice Cream (Dairy and Sweetner free)

Mmmm--I made this tonight and it tasted every bit as good as the coconut milk ice cream I usually make in my ice cream maker (and was way easier!)

Strawberry Banana Coconut Milk Ice Cream

In a food processor blend the following (all measurements approximate)

1/2 frozen banana
5-6 frozen strawberries
1 cup coconut milk (full fat)
1/2-1 tsp vanilla extract

Puree until there is a smooth consistency--add more/less coconut milk to get the right ice cream-like texture.

SOOOOO delicious--my dh thought it tasted as good as the usual homemade ice cream, and he can be pretty picky, esp. when it comes to *my* cooking. If you keep a few bananas and a bag of strawberries in the freezer, you can make this in minutes. My favorite part is that there is no sweetner needed--the bananas make it sweet enough!

I wonder if I can make this dairy free without coconut too? (and almond and egg free)

I used to use rice milk w/ frozen banana and vanilla to make a decent ice cream sub--although I'm now deeply enamored w/ coconut milk (as we can tolerate it)--the creaminess of it makes everything taste very dairy like. But I'd think any milk sub would work--it won't taste exactly the same, but I bet you would still get a tasty, ice cream like substance! If you try it w/ a milk alternative (hemp? cashew? etc.) lmk how it comes out! It could easily become a smoothie w/ too much milk sub--just add a little at a time until you get the right texture. The frozen banana is key!

I was just in awe of how much it tasted like my usual strawberry ice cream recipe, which has 1/2 cup honey and needs to be made in the ice cream maker! This was waaaay easier and faster!

I make something like that with 1 cup frozen strawberries, 2 TBLSP cashew butter, 1 tsp vanilla extract or some vanilla bean powder, and enough water to keep the blender running. Sooo yum...even DH who eats dairy thought it tasted fairly close to ice cream.
