What type of vessel for brewing kombucha?

I won a kombucha scoby at a silent auction, and I have read that the brewing needs to happen in a glass bowl for a large surface area. I received it in a half-gallon mason jar, where it seems to be doing just fine. I'd love to be able to use the jar, so that I can stow it away more easily when it's brewing. Can I do that or do I really need a bowl? Please tell me how you do it. . . TIA!

I use a one-gallon widemouth glass jar, covered with a paper coffee filter held on with a rubber band.

You can keep using the mason jar

I only use jars. Usually either a wide mouth half gallon mason jar or a wide mouth gallon glass jar I get from our local co-op (old gallon size pickle jars work too). I've personally never used a bowl.

I don't have a large enough jar, so I use thick-walled glass flower vases. To cover, I used a kitchen towel and taped the towel down with blue painter's tape. It seems to work fine for me.

Use the half-gallon mason jar. I have used everything, and finally started using a half-gallon mason jar, and love it. Don't fill it completely to the top, leave a little room so that the scoby that grows is beneath the narrow top where the lid sits. This will allow the scoby to have a larger surface area. I love half-gallon mason jars, and they are not the easiest to find! Good luck!
