Oh boy!

I am so Out of time!!

A local market had chicken breasts on sale super cheap - so I bought 30 lbs of them.

The timing is AWFUL -tomorrow is parent teacher conferences (work till 8pm), Friday I will be exhausted from working late and Saturday morning my grad work is due.

So.. what would you do?

I chopped/browned 10 lbs of it tonight and made chicken packets and a dump meal (salsa/peach jelly) and have enough cooked chicken to toss up some enchiladas.

I have TONS of staples in the house (onions, canned tomatoes cream soup, cheese, rice etc)

I need ideas that will take me no time and have decent ideas...

I imagine that if I run out of time I will just foodsaver it in 2-3 lbs packages for later meals. Any ideas tho?

A huge pot of chicken noodle soup?? You could freeze a bunch too!
How about a big neighborhood cookout?

HAve a crockpot?

BBQ chicken is popular here - pour some BBQ sauce over a pile of chicken (fill it up!) in the crock. Cook for 8hrs, on low. Break up with fork. Serve on rolls with coleslaw on the side, or however else you want (yummy on salads, baked potatoes, etc). The extra freezes nicely.

Fill up the crock and put some seasonings on top of the meat (I like cumin, red pepper, salt, paprika....), and then let it cook on low for like 8hrs. The meat should break up with a fork and is great in tacos, on eggs (huevos rancheros, anyone?), over rice, etc. Also freeze the extras.

If I had 20lbs of chicken sitting around I'd just keep filling the crock and making different seasonings of "shredded chicken" until I was done. Maybe 3-4 crockpot loads. Then freeze in smaller packs for easy meals this winter.

You can't freeze it raw?

I'd probably bake it, then pull it off the bones, shred, and freeze to use in casseroles, soup, etc. Save all the bones, and make a huge pot of stock.
