Making tamales in a stock pot with a veggie steamer...

How do I check the water level to make sure it's not running dry? How likely is it to run dry if I'm steaming for an hour? Where should I keep the burner set - md, md low, low? How would I add more water without getting tamales wet?

Put a coin in the water. If it's not rattling, you need more water.

Burner on lowest to keep a good boil going.

Pour the water into a funnel aimed at the side of the pot.
