What do you want to do with your degree? If it's to work as a dietitian/nutritionist you have to get your degree from an ADA approved school. If it's just to learn about nutrition, I'm sure there are plenty of individual courses and longer programs (including holistic nutrition, I've seen this offered in online format.) But the thing is, to work legally -in cluding private nutrition counseling - you have to be a registered dietitian. That is my understanding, anyway.
